\"Tapastry_by_Justin_North_LowPullman, Accor\u2019s 5-star hotel brand, has launched a new, vibrant way to dine with its Tapastry menus combining artistry and gastronomy.<\/span><\/span>

Each Pullman hotel in Australia will offer a selection of Tapastry dishes that showcase regional ingredients in innovative small plates created by Pullman\u2019s Culinary Ambassador Justin North.<\/span><\/div>\n

Each plate is a small, colourful work of art that comes together to create the perfect experience for all the senses, similar to the beauty of a tapestry. Tapastry will weave together producers from all across Australia in a celebration of the diverse ingredients available throughout the country. The concept has been created to invite guests to pause their busy schedules and discover local cuisine in a new and contemporary way with a spirit of sharing and conviviality.<\/span><\/div>\n

Pullman\u2019s Culinary Ambassador Justin North has created a menu of 10 dishes that will use Australia\u2019s best produce available in each region while each of the Pullman hotel\u2019s Executive Chefs have created four additional dishes highlighting the region\u2019s best produce in which each hotel is located.<\/span><\/div>\n

\"Justin\u201cI wanted to create a menu of dishes that could be adapted regionally using the best local produce so that there is consistency across the brand while still maintaining a sense of place. The beauty of the small tapas style dishes is that you can experience many different regions in the one sitting, often in the one dish giving you an appreciation for the destination and it\u2019s excellent variety of produce,\u201d North said.<\/span><\/div>\n

Examples of the Tapastry dishes available at Sydney properies Pullman Quay Grand Sydney Harbour, Pullman Sydney Hyde Park and Pullman at Sydney Olympic Park include fried fillets of whiting and Hawkesbury Calamari with chilli salt and lime a\u00efoli ; A selection of Byron Bay Artisan Salumi and pickles ; Roast Northern Rivers Pork Belly slow cooked octopus and miso eggplant; and Earl Grey ice cream, Zokoko Chocolate, salted caramel.<\/span><\/div>\n

With a heritage in the fine art of travel first established in the Americas in the 1800s and then expanding into Europe, the Pullman brand was resurrected in Bangkok in 2007 to meet the needs of today\u2019s busy traveller. Pullman has now established itself as the largest network of upscale hotels in Asia Pacific with 45 hotels across the region. Globally there are 89 Pullman hotels in 24 countries.
