Graig Farm in Newton will provide organic Welsh lamb for a signature dish including shoulder of lamb, smashed celeriac, chilli and thyme. Swillington Farm near Leeds will produce beef for a signature dish of slow cooked beef brisket with anchovy, rosemary potatoes and a red wine sauce.<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>River Cottage has proved to be an invaluable partner for Marriott, facilitating the introduction of key local suppliers and sharing best practice on sustainable sourcing along with daily menu planning.\u00a0 The collaboration also supports Marriott Hotels\u2019 new Travel Brilliantly campaign that aims to inspire exceptional travel experiences through innovation in culinary, design, technology and more.<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div>\n<span>\u201cCulinary enjoyment is a crucial element of any travel experience and the partnership with River Cottage will not only enhance the guest experience but hopefully encourage local people to try our restaurants too,\u201d said Osama Hirzalla, Vice President Brand Marketing &#038; eCommerce for Marriott\u00a0<\/span><img loading=\"lazy\" decoding=\"async\" alt=\"6a0128763ee05d970c019affb26abb970c-800wi\" data-mce-src=\"http:\/\/www.eglobaltravelmedia.com.au\/wp-content\/uploads\/2013\/10\/6a0128763ee05d970c019affb26abb970c-800wi-211x300.jpg\" height=\"240\" src=\"http:\/\/www.eglobaltravelmedia.com.au\/wp-content\/uploads\/2013\/10\/6a0128763ee05d970c019affb26abb970c-800wi-211x300.jpg\" width=\"169\"><span>International in Europe.<\/span>\n<\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>In addition to Marriott\u2019s Future Fish programme that aims to select and serve fish and shellfish from sustainable sources, the partnership will see changes in the following areas of Marriott\u2019s food offering:<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0 Local sourcing \u2013 Increase the percentage of food sourced by each Hotel from within a 60 mile radius to 80%<br \/>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0 Menu change frequency \u2013 Increase the number of times the restaurant menu changes, from quarterly to daily<br \/>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0 Waste management \u2013 Further reduce food wastage from a current level of 5%<br \/>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0 Sustainability rating \u2013 Improve the Sustainable Restaurant Association rating of each hotel<br \/>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0 Organic meat \u2013 All meat used in the restaurants will be organic<br \/>\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0Free range chicken \u2013 All chicken used in the restaurants will be free range<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>The chefs at both hotels have undergone rigorous training at the River Cottage recently launched Chefs\u2019 School and obtained City &#038; Guilds accredited certificates in a range of competencies, from procuring sustainable food through to butchery and nutrition.<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>Chris Griffin, Head of Education at River Cottage, says:\u00a0 \u201cThis is an exciting project for River Cottage because of the substantial changes we can help Marriott make in procuring and cooking food.\u00a0 The new menus embrace our SLOW philosophy \u2013 Seasonal, Local, Organic and Wild &#8211;
