Guests can swirl and sip upon world-class favourites including Equipo Navazos, Osbourne and Co. and the Gonzalez Byass \u201cPalmas Range\u201d. With a crisp and refreshing bang, Josef Murray, General Manager of both Ham &#038; Sherry and 22 Ships, and the catalyst to Hong Kong\u2019s growing sherry culture, is excited to explain the wide variety of tastes that sherry has to offer. Standing beside him is Neil Rivington from London\u2019s celebrated La Bodega Negra and Soho House, who brings his cultured attitude and cocktails to the bar. Together they guide customers through their sherry experiences.<\/span><\/div>\n<div><span><br \/><\/span><\/div>\n<div><span>The menu, crafted by Jason Atherton and brought to the bar by Executive Chef Lee Westcott, is comprised of an\u00a0<b>On Board<\/b>\u00a0section featuring Spanish jam\u00f3n,\u00a0<b>Para Picar<\/b>\u00a0of small sharing sized dishes,\u00a0<b>Salads<\/b>,\u00a0<b>Pan Con \u201cOn Toast\u201d<\/b>\u00a0and\u00a0<b>Sweets<\/b>. Guests can savour a range of specially aged Spanish ham including\u00a0<i>Jam\u00f3n Iberico de Bellota aged 40-48 months<\/i>\u00a0(small $240, large $330),\u00a0<i>Iberico paleta aged 36 months<\/i>\u00a0(small $140, large $190) and\u00a0<i>Jam\u00f3n De Teruel PDO aged 24 months<\/i>\u00a0(small $90, large $125). For those who fancy a bit of everything, the\u00a0<i>Chef Selection mixed board<\/i>\u00a0is the perfect option ($200). Like any traditional tapas bar, a selection of Para Picar allows guests to nibble on and share between them whilst enjoying their tipple<span data-mce-style=\"text-decoration: line-through;\">s<\/span>. Dishes include the classic\u00a0<i>Padron peppers\u00a0<\/i>($68),\u00a0<i>Paella arancini, chorizo and pepper puree<\/i>\u00a0($68),\u00a0<i>Goats curd and jam\u00f3n croquettes\u00a0<\/i>($75) and\u00a0<i>Garlic fries with brava sauce\u00a0<\/i>($68). Pan Con \u201cOn Toast\u201d options include\u00a0<i>Seared beef, manchego and rocket\u00a0<\/i>($98),\u00a0<i>Gambas, fennel and aioli\u00a0<\/i>($118) and\u00a0<i>Sobrasada and fried quail egg<\/i>($98).
